Creamy Mashed Turnip Recipe

Ingredients:

  • 750g - 1 kg small or medium turnips

  • 2 large, high starch potatoes

  • 1 sprig fresh rosemary

  • Table spoon of fresh garlic

  • 1 L Chicken Stock or broth

  • 200-250 mL heavy cream

Directions:

  1. Peel and cut turnips and potatoes into 2.5 cm chunks.

  2. In a pot, combine turnips, potatoes, garlic, and rosemary.

  3. Pour enough chicken broth to cover, then bring to a boil and cook uncovered for 15-20 minutes until tender.

  4. Remove rosemary halfway through cooking.

  5. Drain, reserving cooking liquid.

  6. Return pot to heat to evaporate excess moisture.

  7. Add cream and mash until smooth.

  8. Season with salt and pepper to taste.

  9. Serve topped with butter if desired.
