Jerusalem Artichokes

Simple Roasted Jerusalem Artichokes with Thyme Butter
Prep Time: 10 minutes
Cook Time: 45 minutes
Serves: 4
Ingredients:
1/2 kilo of washed Jerusalem Artichokes
2 tablespoons of butter
1 teaspoon of Thyme (you can grow this easily too)
1 table spoon fresh diced garlic or table spoon of garlic powder
1/2 a brown onion, finely diced or table spoon of onion powder
Olive Oil
Salt to Season
Directions:
Preheat oven to 200 degrees Celsius.
Clean Jerusalem artichokes, coat them with olive oil, and season with salt. Place on an air frying tray or oven tray and roast in the preheated oven for about 30 minutes or until tender inside and crispy outside.
While the Jerusalem artichokes are roasting, make the thyme butter. In a bowl, mix together butter, thyme, garlic, onion powder.
Remove Jerusalem artichokes from the oven and place in an oiled fry pan on medium heat. Using a spatula or potato masher, firmly press down on each Jerusalem artichoke to flatten them without breaking them apart.
Brown one side of the Jerusalem artichokes, then flip them over and add the thyme butter mixture. Cook until browned.
Remove from the pan and place on a plate. Drizzle some thyme butter from the pan over the Jerusalem artichokes.
